I love love love waffles. They’re crispy on the outside and wonderful fluffy goodness on the inside. However, like most breakfast foods, they aren’t exactly known for being healthy and tend to be associated with the sweeter side of the breakfast menu. Many might skip the lovely indulgences of the waffle for this very sugary reason.

Until you add bacon and cheddar cheese that is. Bacon and cheddar are a wonderful addition to a waffle and make it a fun and savory meal. Substitute the regular flour for a whole wheat and cornmeal mix and these waffles go from a savory light snack to a hearty way to start the day.

How to Make Whole Wheat Cheddar Bacon Waffles
This recipe is based on the Cheddar Bacon Waffles recipe from Better Homes & Gardens’ Calorie-Smart Recipes 2018.

Ingredients
- 1 1/2 cups all-purpose flour
- 1/2 cup whole wheat flour
- 1/4 cup corn meal or yellow polenta
- 1 3/4 cup milk
- 1 tablespoon sugar
- 4 teaspoons baking powder
- 2 eggs
- 1/3 cup melted butter or olive oil
- 8 slices thick cut bacon, diced
- 1 cup shredded sharp cheddar cheese
- Spray oil as required
- Butter & Pure Maple Syrup for serving
Instructions
- Start by cooking the diced bacon in a heavy skillet. Remove from heat once cooked and drain on a paper towel.
- Pre-heat the waffle iron while you prepare the batter.
- Mix the flours together in a bowl with the sugar and baking powder until thoroughly combined.
- Add the eggs and melted butter (or oil) to the flour and mix until combined.
- Fold in the cheddar cheese and cooked bacon until ingredients are evenly blended.
- Now it’s time to make the waffles! Once your waffle iron is preheated, lightly spray the cooking surfaces down with oil before ladleing enough batter into the bottom iron to fill it about 2/3rds full. Close the waffle iron and allow to cook completely before removing the waffle and allowing to cool.
- Repeat process with remaining waffle batter.
- Serve finished waffles with melted butter and/or topped with maple syrup.
